An investigation into the factors affecting ethanol yield and the subsequent fermentation process optimization in Rum production: A Case Study of Bundaberg Distilling Company

The research improved rum production at Bundaberg Distilling Company by optimizing the fermentation process. The study analysed raw materials and studied microbial dynamics (yeasts/bacteria) resulting in the identification of ideal conditions for ethanol/rum production. These findings are helping to achieve higher ethanol yields, reduce waste, and enhance product consistency, potentially saving $600,000 annually.
