Food writers ‘recognise the importance of communicating to readers the taste of a particular food or dish, whether in a restaurant review, a work of fiction or a journalistic article’ (4). Santich’s students were encouraged to taste a variety of foods and to find ‘words to match the flavours and textures they were tasting’ (4), and this is apparent in their stories.
