While food historians have begun to focus attention on world's fairs, no study as been undertaken of the roles food and dining played in World Expo 88, held in 1988 in Brisbane as part of the national Bicentennial year. This article identifies how food operated as an income generator; pedagogical, marketing and symbolic tool; and focus for national and international experience during this important moment in Australian cultural history.
